Easy Peasy Garbanzo Salad

garbanzo_saladGone are the days when I used to enjoy cooking only because I loved to try out new dishes, or loved to help out my mom in her kitchen.  Years later, with a family of my own, cooking has become mandatory which sometimes takes away the pleasure from the art. At such times, I try to come up with something simple, quick, delicious, yet healthy. Here’s one such dish that is relished mostly by my daughter and friends. I love it too.

2 cans               garbanzo beans, drained (each can is 15oz. or 425 gms.)

1 big                   tomato, chopped fine

1/2                     red onion, chopped fine

1                         thai or serrano chilli  pepper, chopped fine (optional)

To taste            salt

To taste           pepper

1/2                    lime (juicy)

a few sprigs    cilantro leaves, washed and chopped fine

Method: In a serving bowl, mix together all ingredients except salt, pepper, lime juice and cilantro. Make sure not to break the beans and tomatoes.  Refrigerate until you are ready to serve.

Add salt, pepper,lime juice and cilantro and mix well just before serving. Garnish with chopped cilantro.

Note: If you can’t handle hot peppers and Thai peppers can be omitted and Serrano pepper can be deseeded . If you like the heat of chilli peppers, you can increase the numbers of peppers as per your taste. Warning though – Thai peppers are hot.
